Directions
1. To make the cucumber salad: Wash and cut the cucumbers into 1-inch sections, then into quarters. Season with salt and leave to drain for about 30 minutes.
2. Prepare the honey and chili sauce: in a bowl, mix the rice vinegar, the grated garlic clove, honey, sesame oil, and chili oil.
3. Rinse the cucumber chunks with water to remove excess salt, then pat them dry with a clean dish towel or paper towels

We used English cucumbers but also recommend using Persian cucumbers, Japanese cucumbers, or Mini cucumbers. Persian cucumbers are small, have thin skin, and are nearly seedless. They are super crunchy, snappy, a little sweet, and less watery. And, because the skin is thin, we don’t need to peel it.
