- 10 cups low-sodium vegetable broth
- 1 cup chopped kale
- 1 cup chopped baby spinach
- 1 packet of baby spring mix (mix of baby green lettuce, baby red chard, baby green chard, baby bokchoi, oakleaf lettuce, etc…)
- 1 cup heavy whipping cream
- 1/4 teaspoon salt and fresh cracked pepper
- 1/4 teaspoon red chili pepper flakes, optional

Directions
1. To make the creamy sausage soup with vegetable: In a 6-qt. stockpot or Dutch oven, heat oil over medium-high heat. Add sliced sausage, onion, and celery; cook for 6-8 minutes or until sausage is no longer pink and vegetables are tender. Add minced garlic, then cook 1 minute longer.
2. Add broth, black pepper, and Cajun seasoning and bring to a simmer. Stir in kale, spinach, and the rest of the green vegetables. Reduce the heat; simmer, covered, 10-12 minutes or until veggies are tender.
3. Add the cream and give a good stir. Reheat for a minute, then adjust seasoning if necessary.

I LOVED this recipe. I swapped out the heavy cream with 5 oz of coconut cream and 3 oz of almond milk. It wasn’t as creamy as the photo, but it was SO delicious. I poured it over brown rice & quinoa to bulk it up. My daughter ate THREE BOWLS and we had it for leftovers the next night as well!!!
