Ingredients list for the Creamy Mushroom Parmesan Chicken
- 2 large chicken breasts, sliced horizontally
- 1/2 lb (225g) mushrooms, sliced
- 3 tablespoons butter, divided
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 teaspoon oregano
- 1 medium onion, minced
- 4 cloves garlic, minced
- 2 tablespoons marinara sauce (or your favorite tomato sauce)
- 1/2 cup chicken broth
- 1/2 cup whipping cream or heavy cream
- 1/3 cup grated Parmesan cheese
- 1 teaspoon fresh chopped parsley and red chili pepper flakes, for garnish

Directions
1. To make the creamy garlic chicken breasts with mushrooms: Thoroughly season chicken breasts with salt, pepper, and 1/2 teaspoon oregano on both sides.
2. In a large skillet, melt 2 tablespoons of butter with a bit of olive oil over medium-high heat. Add chicken breasts and cook for about 4 minutes on each side until browned. Once chicken breasts are done and no longer pink, transfer the grilled chicken breasts to a plate and set aside.
3. To make the creamy mushroom parmesan sauce, add the remaining tablespoon of butter to the same pan. Cook onion, garlic, 1/2 teaspoon oregano, and sliced mushrooms. Slowly add chicken broth, marinara sauce, whipping cream, and Parmesan cheese and mix to combine until smooth while simmering for 2-3 minutes. Adjust seasoning with salt and pepper.
4. Add the cooked chicken breasts back to the skillet and reheat for 2-3 minutes. Serve immediately the creamy mushroom parmesan chicken, garnished with fresh chopped parsley and red chili pepper flakes. Enjoy with cauliflower rice, zucchini noodles, or pasta for non-keto! ❤️

Tips for the creamy chicken breast recipe
- Go easy on salt at first because the parmesan and chicken broth will add salt to the cream sauce. You can adjust seasoning afterward.
- You might want to lower the heat a little bit before making the sauce so the cream does not separate. Heavy cream brands differ and some are more sensitive to heat than others.
Can we use frozen chicken breasts?
We do not recommend frozen chicken breasts straight into this recipe. You want to thaw them overnight in your refrigerator and bring them to room temperature before cooking.

You can keep the chicken breasts and mushrooms for up to 2 days in an airtight container in your refrigerator. Reheat on the stove or the microwave with a few drops of water to loosen the sauce.
