- 5oz (150g) bacon, cut into strips
- 2 tablespoons unsalted butter
- 2 pounds (1kg) broccoli florets
- 1/2 teaspoon salt and fresh cracked pepper
- 1 teaspoon paprika
- 5 cloves garlic, minced
- 3/4 cup (180ml) heavy whipping cream
- 2 tablespoons cream cheese
- 1/4 cup (60ml) chicken or vegetable stock
- 1/2 cup fresh grated parmesan cheese
- 1/2 cup grated mozzarella

Directions
1. To make the Creamy Garlic Parmesan Broccoli with Bacon: Preheat your oven to 375°F (190°C).
2. Fry the bacon in a large oven-safe skillet (we like cast-iron) over medium heat until crispy. Use a slotted spoon to transfer to a paper towel-lined plate to soak up some of the fat.
3. Drain most of the bacon fat from the pan, leaving about 1 tablespoon. In the same skillet, melt the butter, then add the broccoli florets and season with salt and pepper. Scrap up any browned bacon bits from the bottom of the pan, and cook while stirring occasionally, for about 6 minutes.
4. Add in the garlic and stir it through the broccoli for a minute, until fragrant. Add the cream, softened cream cheese, chicken stock, half the grated cheeses, and paprika. Reduce heat down to low and allow to simmer until tender–approx. 3-4 minutes, stirring until smooth.
5. Add the fried bacon back in and give everything a good mix to combine all of the flavors together. Top the creamy broccoli and bacon with the remaining grated parmesan and mozzarella.
6. Bake for about 15 minutes until the cheese is bubbly and broccoli is done to your liking. You can set the oven to broil for the last 2 minutes, to crisp up the top.
7. Remove the Creamy Garlic Parmesan Broccoli with Bacon from the oven. Season with a little extra pepper, and sprinkle with fresh chopped parsley. Enjoy!

- If you like your broccoli extra tender, you can blanch them in boiling water for 3 minutes, then drain before using.
- You can use other vegetables for this recipe: You can use cauliflower, carrots, Brussels sprouts… The creamy Parmesan sauce is delicious with many other veggies than broccoli.
Can we use frozen broccoli?
You can use frozen steamable broccoli and cook it in a microwave for 3 to 4 minutes following the instructions on the package. Drain well and follow the recipe normally. Otherwise, just thaw broccoli in cold water and drain well.

You can keep the creamy broccoli and bacon for 2 days in an airtight container in the refrigerator. Reheat gently in the microwave or on the stove, with a few drops of water to loosen the sauce.

This came out great! Very easy and delicious. I threw in a little diced red onion and a couple chopped tomatoes at the garlic step, made for a nice touch. I'll be making this again very soon!

Great recipe. Frozen broccoli results in extra liquid. Had a mix of fresh and frozen broccoli, so didn't add stock, and reduced extra liquid before baking. Probably added extra Parmesan (couldn't help myself). Well received. Will definitely make again.
