The ideal ratio is 1 cup oats to 2 cups liquid. So for this recipe, we use 2 cups of steel-cut oats and 4 cups of liquid in total. Combine in the Instant Pot with a pinch of salt and let the pressure cooker do the magic. Cook for 4 minutes, then let the pressure release naturally for 10 minutes. Stir in sugar and vanilla extract and you’re up for a delicious, gluten-free, dairy-free breakfast!

1. To make the Instant Pot steel cut oats: Lightly grease the insert of the Instant Pot with nonstick cooking spray.
2. Pour the can of coconut milk into a 4-cup liquid measuring cup. Add water to reach 4 cups. Pour the mixture into the Instant Pot. Stir in the steel-cut oats and salt.
3. Close the lid and make sure the valve is in sealing position, select the Manual or Pressure Cook button, and set up the IP for 4 minutes.
4. When finished cooking, let the pressure naturally release for 10 minutes before manually releasing the remaining pressure and opening the lid.
5. Stir in the brown sugar and vanilla extract. Serve the coconut steel cut oats with additional coconut milk and your favorite toppings (blueberries, coconut flakes, honey, almonds…). Enjoy! ❤️
