Chocolate cookie brownies recipe
Why make a brownie cookie when you can simply make a brownie? Well, the chocolate cookie brownies combine 2 aspects of a classic brownie that are not necessarily tied together: a crinkly crust, and a moist, gooey inside full of chocolate flavor. With these brownie cookies, you get the two in one piece! Prepare several batches of these scrumptious fudgy cookie brownies because they won’t last long!
How to make soft brownie cookies
The method to make chocolate brownie cookies is pretty easy. After a few tries, we nailed the best ingredients proportions!
First, whisk flour, cocoa, baking powder, baking soda, and salt together in a large bowl.
Melt 2/3 of the chocolate chips, oil, and butter in a medium bowl. Whisk in the milk until fully combined and smooth.
Beat sugar and eggs. Add the melted chocolate mixture and whisk until smooth. Fold in the flour mixture until well combined. Fold in the remaining 1/3 of chocolate chips.
Divide portions of the cookie dough onto baking sheets then bake in the oven until the brownie cookies are puffed and covered with large cracks, about 15 minutes. Allow the brownie cookies to cool down, and sprinkle with kosher salt. See the full directions below for more details.

Directions
1. To make the chocolate brownie cookies: Adjust your oven racks to the middle position and preheat your oven to 300ºF (150ºC). Line two rimmed baking sheets with parchment paper.
2. Whisk flour, cocoa, baking powder, baking soda, and salt together in a large bowl and set aside.
3. Microwave 2/3 of the chocolate chips, oil, and butter in a medium bowl at 50 percent power, stirring halfway through with a wooden spoon, until melted, about 3 minutes. Whisk the milk into the chocolate mixture until fully combined and smooth.
4. Using a stand mixer or hand mixer, whip sugar and eggs on medium-high speed until very thick and pale. Add the melted chocolate mixture and whisk by hand until smooth.
5. Fold in the flour mixture using a spatula until well combined. Fold in the remaining 1/3 of chocolate chips and chopped pecans, if using.
6. Using a tablespoon or a cookie scoop, divide portions of the cookie dough onto the prepared baking sheets – you should get 20 cookies total. Bake in the oven until the chocolate brownie cookies are puffed and covered with large cracks, about 15 minutes, rotating the baking sheets halfway through baking to ensure even cooking for all cookies.
7. Let the chocolate brownie cookies cool completely on the baking sheets, about 30 minutes. Sprinkle with kosher salt. Enjoy! ❤️

Tips for the chocolate brownie cookies
- Try adding in a little instant coffee or chopped candy canes to the batter for a nice twist on these chocolate brownie cookies. Toasted walnuts are great too!
- You can freeze scoops of the dough on a baking sheet, store in a container, and bake when you are ready.
- Make sure to beat the egg mixture for 4 to 5 minutes so the brownie cookies hold their shape and don’t get too flat.
- If you have some time available, chill the dough before making the scoops and baking the brownie cookies.
- Note that the brownie cookies will not be fully set when you take them out of the oven but they will firm up as they cool down.
How and how long to keep the chocolate brownie cookies?
The chocolate brownie cookies can be stored in an airtight container at room temperature for up to 4 days.
Can we bake these brownie cookies without eggs?
Yes, try using 1/4 cup of mashed banana as a substitute for the egg. The ripe banana will act as a binding agent and help the brownie cookies to hold together.

Very easy recipe to follow. I'm usually leery of "fudgy brownie" recipes because I think I will make it too "cakey" or too underdone. These turned out great!
