- 1 lb. (450g) boneless skinless chicken breasts, cut into 1-inch pieces
- 2 tablespoons vegetable oil
- 2 1/2 cups broccoli florets, chopped into bite-size pieces and rinsed
- 1 large red bell pepper, seeded and diced
- 3 cloves garlic, minced
- 1 tablespoon peeled and finely minced fresh ginger
- 1 teaspoon red chili pepper flakes, optional
Stir Fry Sauce
- 2 tablespoons cornstarch, optional
- 3/4 cup low-sodium chicken broth
- 3 tablespoons low-sodium soy sauce
- 1 tablespoon honey
- 1 tablespoon sriracha sauce, optional
- 1 tablespoon toasted sesame oil

Directions
1. To make the chicken bites stir-fry: In a small bowl, whisk together soy sauce with cornstarch, then whisk in chicken broth, sesame oil, sriracha, and honey. Set aside. Pat chicken dry with paper towels and season with a pinch of salt and black pepper.
2. Heat 1 tablespoon oil in a large non-stick skillet over medium-high heat. Add chicken bites to skillet, spacing pieces apart in an even layer. Cook chicken through, turning halfway through cooking, about 6 minutes. Transfer chicken bites to a plate, leaving the oil in the skillet.
3. Add another tablespoon oil to the skillet. Add in broccoli, bell pepper, ginger, and garlic, and saute the vegetables until nearly tender about 4 minutes.
4. Give a quick stir to the stir-fry sauce, then pour into the skillet and cook, tossing constantly, until the sauce has thickened and veggies are tender about 1 – 2 minutes.
5. Add chicken back and season with more stir-fry sauce to taste, if desired. Serve the chicken bites stir-fry with broccoli and peppers immediately over rice, cauliflower rice or on its own. If desired sprinkle with red pepper flakes or sesame seeds or drizzle with sriracha. Enjoy!

So delicious! Did a few alterations: veg stock instead of chicken; coconut aminos instead of soy sauce; skipped sriracha sauce & chili seeds; used more peppers too

Wow! This recipe is amazing! Only 3 changes I made: use of arrowroot flour instead of cornstarch, added spinach, and did not add the red pepper flakes/sriracha since I don’t eat spicy. Will definitely make again! Thank you!

Turned out just like the pictures. I think I would tone down the amount of ginger in the recipe just a smidge if I made it again though (and this is just a personal preference). It really packed a punch and was very flavourful.
