- 3 chicken breasts
- 1 cauliflower (cut into thick slices)
- 1 teaspoon Italian seasoning
- 1 teaspoon red chili pepper flakes
- 6 ounces (250 g) marinara sauce

- 1 teaspoon garlic powder
- 1 teaspoon onion powder

Directions
1. To make the cauliflower parmesan chicken casserole: Combine garlic powder, onion powder, Italian seasoning, chili pepper flakes, salt, and pepper in a shallow dish. Add chicken breasts into the spices and evenly coat each breast in the mixture. Let sit while you prepare cauliflower.
2. Preheat your oven to 425°F (220ºC). Arrange cauliflower steaks in a single layer on a rimmed baking sheet and brush both sides with oil. Season with salt and pepper.
3. Roast cauliflower, flipping once, about 10-15 minutes. Remove from the oven and top each cauliflower steak with half the marinara sauce. Place seasoned chicken breasts on top of the cauliflower steaks and top each chicken breast with the remaining marinara sauce. Top each chicken breast with 2 tablespoons of parmesan cheese and shredded mozzarella cheese. Sprinkle again with more parmesan, if you like.
4. Bake the chicken cauliflower parm for 35-40 minutes, or until cheese is bubbling and melted, and the chicken is completely cooked through. Serve the chicken casserole with parmesan and cauliflower steak immediately, sprinkled with fresh chopped basil (or parsley). Enjoy!
