Ingredients list fo the Chicken Orzo Soup
Serves 2
- 1/2 lb (225g) chicken breast or tenders, sliced
- 1 onion, minced
- 3 large garlic cloves, minced
- 1 small jar (3-4 oz) sun-dried tomatoes in oil, chopped
- Salt and fresh cracked pepper
- 1 teaspoon Italian seasoning
- 1/4 teaspoon crushed red pepper flakes
- 1/2 cup orzo
- 4 cups (1l) chicken stock
- 1 cup heavy cream
- Fresh chopped basil, for garnish
- One Jalapeño, sliced, for garnish

Directions
1. In a pot or large pan, heat a tablespoon of the oil from the sun-dried tomato jar. Stir fry chicken for 3-4 minutes until golden, then add sun-dried tomatoes and cook for 2 minutes.
2. Add onion, garlic, crushed red pepper flakes and Italian seasoning and continue cooking for 1 minute. Add orzo pasta and stir to coat coat well.
3. Pour chicken stock over and bring mixture to a boil, then reduce to a simmer over low heat for 10-15 minutes, until the pasta is almost cooked through.
4. Add heavy cream and cook for 1 minute more, stirring regularly. Adjust seasoning with salt and pepper and serve immediately garnished with Jalapeño slices. Enjoy!
Note: This chicken orzo soup works also perfectly with leftover chicken or cooked chicken.
