Ingredients list for the Sausage Cauliflower Fried Rice
Serves 4:
- 1 head of cauliflower, (about 2½ cups chopped in a food processor)
- 2 tablespoons olive oil
- 12 ounces sausage meat or chicken sausage, diced
- 1 medium yellow onion, diced
- 2 medium celery stalks, diced
- 1 medium green bell pepper, seeded and diced
- 3 cloves garlic, finely chopped
- 1 teaspoon kosher salt, plus more as needed
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1/2 teaspoon freshly ground pepper, plus more as needed
- 1/8 teaspoon chili pepper flakes optional)
- 1 cup low-sodium chicken broth
- 4 medium scallions, thinly sliced
- Fresh parsley, chopped (optional)

Directions
1. Rinse and chop the cauliflower into florets and put into a food processor. Pulse until the cauliflower until it is small and looks like rice. Transfer to a microwaveable dish and heat covered with 2 tablespoons water for 5 minutes. Set aside.
2. Heat the oil in a large skillet over medium-high heat. Add the sausage and cook until browned. Remove the sausage to a plate and set aside.
3. Reduce the heat to medium. Add the onion, celery, and bell pepper to the fat remaining in the skillet and cook, stirring occasionally, until softened, 5 minutes. Add the chicken broth and scrape up any browned bits from the bottom of the skillet. Let reduce for 5 minutes.
4. Add cauliflower rice, garlic, salt, oregano, thyme, black pepper, and chili flakes. Cook, stirring occasionally for about 3 minutes. Add the reserved sausage and cook the cauliflower rice, sausage and veggie mixture until heated through and cauliflower rice is tender. Serve with chopped scallion, parsley and more pepper and chili flakes if needed. Enjoy! ♡
