Ingredients list for the Cajun Sausage Shrimp Foil Packs
- 1 pound (450g) large shrimp, peeled and deveined
- 14oz (400g) smoked pork sausage, sliced (or chicken)
- 1 medium zucchini, sliced
- 1/2 bunch asparagus, trimmed and cut in chunks
- 1 red bell pepper, chopped
- 1/2 teaspoon salt and pepper
- 3 cloves garlic, minced
- 2 tablespoons butter, diced or oil
- 2 tablespoons Cajun seasoning
- 2 tablespoons vegetable stock, divided

Directions
1. To make these baked shrimp and sausage foil packs: Preheat your oven to 425ºF (220ºC). Cut 2 sheets of 14 by 12-inch (35 x 30 cm) heavy-duty aluminum foil then lay each piece separately on the countertop.
2. Divide shrimp and sausage onto the aluminum foil near the center then place zucchini, red bell pepper, and asparagus on the side. Sprinkle generously with the Cajun seasoning mix.
3. Add minced garlic over shrimp, sausage, and veggies. Divide butter pieces evenly among the shrimp foil packets, layering them over the shrimp and vegetables.
4. Add a tablespoon vegetable stock in each foil packet and wrap packets in and crimp edges together then wrap ends up. Don’t wrap too tight – keep a little extra space inside for heat to circulate.
5. Transfer to a baking sheet and bake shrimp and sausage foil packets in the oven, sealed side upward until shrimps and veggies have cooked through, about 15 minutes.
6. Carefully unwrap the baked sausage shrimp foil packets with vegetables then garnish with fresh parsley and a slice of lemon. Enjoy!

Tips for Cajun shrimp and sausage foil pack recipe
If aluminum foil is a concern, you can use parchment paper to make the packets instead. You can also line aluminum foil with parchment paper to better close the packets. If you do not have a vegetable or chicken stock at hand, use 1/2 teaspoon powdered stock in the spice mix, plus one tablespoon water in each foil packet. If you don’t use butter, a good drizzle of olive oil will do the trick.
What shrimp to use for the foil packets
These make-ahead foil packets packed with shrimp and sausage is a full meal with zero clean-up! To make garlic baked shrimp and sausage foil packs, buy shrimp (or prawns) already deveined, shelled and cleaned to save time on prepping. You can use shrimp with tails on or off. Frozen shrimp is okay for this recipe, but fresh wild-caught shrimp tend to have better flavor.
What sausage to use for the foil dinner
We prefer smoked sausage for this dish because it adds a nice depth in flavor. Spicy Italian sausage would also work, make sure they are well seasoned.
What other vegetables can we use for the shrimp and sausage for packs
Broccoli is a great addition or substitution for zucchini and asparagus. Try also cauliflower florets, corn to add variety to your foil packet meal.
How long to cook the foil packs
Cooking time depends on the size of your shrimps – we used size 16-20 with a baking time of 15 minutes. Do not bake shrimps for too long or they’ll end up dry. You can open the packets and put back under the broiler for 2 minutes to crisp up the edges if you like.

I love this dish, love the spice! I’ve been making it with the chicken apple sausage and the sweet of that sausage is delicious with the spicy seasoning. Also I didn’t have asparagus so I did an onion, peppers and zucchini mix. It’s so easy cooking it in the foil. Definitely a keeper and I’ll be making it often.
