- 1 lb (450g) Italian sausage, sliced
- 1 lb (450g) mushrooms, sliced
- 1 tablespoon Cajun spice blend
- 1 tablespoon butter
- 1/4 cup chicken stock
- 1 teaspoon freshly cracked black pepper
- 4 cups spaghetti squash mash (recipe here)

Directions
1. To make the Cajun Sausage Mushrooms Spaghetti Squash Mash: Heat a large skillet over medium heat and brown sliced sausage on one side for one minute or two. Flip the sausage and add mushrooms to the same pan. Saute sausage and mushroom, allowing mushrooms to render some water.
2. Season generously with the Cajun mix and toss the sausage and mushroom to coat well. Deglaze with chicken stock and continue cooking until slightly reduced. Melt the tablespoon butter and give a quick stir to combine the sauce. Adjust seasoning with pepper, cook the sausage and mushrooms for a minute more in the sauce then remove from heat.
3. In the meantime, quickly reheat the spaghetti squash mash in the microwave, if needed. Divide into shallow plates and top with the Cajun mushroom and sausages. Serve the Cajun sausage mushrooms spaghetti squash mash immediately, sprinkled with red chili pepper flakes and chopped parsley if you like. Enjoy!
