We use cooked beets, but you can cook them easily by yourself (check the directions in the tips section). Sure you can cook beets on your own. We use the Instant Pot for that, it’s quick and super easy. Place the trivet of your Instant Pot in the bottom of the insert, add one cup of water, then arrange 3 or 4 whole beets, trimmed, but unpeeled. Pressure cook for 8 to 10 minutes depending on the size of the beets. Peel the beets after cooking: the skin goes off easier, and this is less messy. Slice the beets and chill until ready to serve the beet Caprese salad.
Can we substitute the fresh mozzarella?
Fresh Mozzarella is a classic to this Caprese salad. Another option would be burrata which is creamy and mild in flavor – But messier in presentation if you slice it. So if using burrata, arrange the sliced beets to cover a larger round plate, and set up the whole burrata in the center. Season and drizzle with olive oil.
