Ingredients list for the balsamic onion jam
Makes about 2 cups
- 12 medium size onions, roughly chopped
- 1/3 cup sugar
- 1 pinch kosher salt
- 1/4 cup balsamic vinegar
- 1 cinnamon stick

Directions
1. Put the onions in a blender or food processor and pulse until pureed. Transfer to a large pot or skillet and add balsamic, salt, sugar and cinnamon stick.
2. Gently heat the pot and bring to a simmer, reduce heat to low and cook for 1-2 hours until until most of the liquid has evaporated.
3. Discard the cinnamon stick. Transfer the onion butter to mason jars, you can keep it up to five days in the refrigerator.
