

Shrimp and Salmon Foil Packets with Garlic Cream Sauce – Say hello to the easiest way to make salmon in foil packets! Baked over a bed of zucchini, carrots and red onion, salmon and shrimp are infused with a creamy garlic sauce for a richer flavor. This recipe is gluten-free and low-carb, and takes only 20 minutes or less to make in the oven.

Ingredients list for the Creamy Shrimp and Salmon Foil Packets
- 2 (5 – 6 oz) skinless salmon fillets
- 1/4 lb (125g) raw shrimp, peeled and deveined
- 2 zucchini, sliced into half moons
- 1 carrot, peeled and sliced ( optional for low-carb, keto diet)
- 1/2 red onion, chopped
- 2 1/2 tablespoons olive oil, divided
- Salt and freshly ground black pepper
- 1 tablespoon chopped fresh dill
The dill cream sauce
- 1/2 cup heavy or sour cream
- 1/4 cup vegetable broth (or water)
- Fresh cracked black pepper
- One pinch cayenne pepper
- 3 cloves garlic, grated
- 1 tablespoon fresh dill, thinly minced
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried marjoram

Directions
1. Preheat your oven to 400°F (200°C). Cut 2 sheets of aluminum foil of 15-inch (40cm) length. Combine all ingredients for the garlic cream sauce in a bowl and set aside.
2. Divide zucchini, carrot, and red onion among the two sheets of foil and season with salt and pepper.
3. Brush salmon fillets with 1 tablespoon of olive oil, then place over each layer of veggies on foil. Arrange shrimp on top of salmon. Season with salt and pepper. Pour some of the dill cream sauce on top and sprinkle with fresh dill.
4. Wrap sides of foil then fold up each ends to seal. Transfer on a rimmed baking sheet and bake until salmon has cooked through, about 20 minutes (may vary based on the thickness of your salmon fillets). Carefully open foil packets and serve warm with additional dill cream sauce if you want. Enjoy!
