How to bake halibut fillets
It’s best to slightly undercook the halibut rather than overcook it. Halibut is not a very fat fish so it can dry out more quickly than, say, salmon. But good news, the parmesan crust acts as a coating to prevent overcooking the fish! In a short 15 minutes, you’ll have a crispy halibut fillet ready to serve with its side of roasted asparagus! Preheat your oven to 400ºF (200ºC). Combine parmesan and spices in a small bowl. Arrange fish and asparagus in a sheet pan, then after drizzling wot olive oil, sprinkle the fish fillet with the parmesan mixture, pressing into the flesh with your fingers. Bake in the hot oven for 15 minutes, garnish and you’re ready to serve!

If your asparagus is very thick, you can peel off some of the stem using a vegetable peeler, or blanch in boiling water for 2 minutes then soak in an ice bath before roasting.
