Yield: 3 to 4 Servings
- 6 to 8 bone-in, skin-on chicken thighs
- 1 lb (450g) potatoes, peeled quartered
- 1 red onion, quartered
- 2 tablespoons extra virgin olive oil
- 2 teaspoons minced garlic powder
- ½ teaspoon hot cayenne chili powder
- 2 tablespoons chopped fresh scallion
- Kosher salt and freshly ground pepper, to taste

Instructions

1. Preheat your oven to 400°F (200°C) for 15-20 minutes. Lightly oil a rimmed baking sheet/roasting pan or coat with nonstick spray.
2. In a large bowl, whisk together chicken thighs, potatoes, garlic powder and chili powder. Season to taste with salt and pepper and mix well with your hands to help spices penetrate the meat and potatoes. Make sure to wash your hands afterward!
3. Place chicken, potatoes and red onion in a single layer onto the prepared baking pan. Add a drizzle of olive oil.
4. Roast in the preheated oven until the chicken is completely cooked through, reaching an internal temperature of 165°F (75°C), about 25-30 minutes. Then broil for 2-3 minutes to make it crisp.
5. Remove from oven. Cover with foil and allow to rest for 5-10 minutes while the juices settle before serving. Serve hot, garnished with chopped scallion and drizzled with lemon juice.
Note: Cooking time will vary depending on the size and thickness of the chicken thighs and potatoes. After step 2, you can directly transfer the chicken, potato and spices in a air-tight sealed bag and keep it in the fridge or freezer and pop in the oven when needed.

Family loves it! Definitely a hit and so easy to make. I used boneless thighs and it took about 25 mins to all to cook. Simple yet delicious!

Delicious. Like others I agree 40 minutes was cooking time. We both loved it. Made as written with addition of a bit of smoked paprika. Smelled so good and excited to eat I neglected green scallions sadly. Still- fabulous. Thank you

This recipe was amazing--absolutely delicious! I knocked off a star because--as others have mentioned--it took about 45 minutes to cook; however, I was expecting this to be the case. I used a generous amount of DanO's original seasoning beneath the skin, as well as on top. After baking for 45 minutes, I broiled the pan for an additional 5 minutes, which crisped everything up nicely. I was shocked that everything cooked to perfection at the exact same time!! Also, clean up was a breeze--just had to throw away the foil lining and give the pan a quick wash. Definitely going to be making this over and over again! :)

THIS recipe is to go to for many years! Sorry i never left a review before but now i realized its important to let others know! Im asian and this dish is always a hit with my western guests! Even last minute you can do it. I cooked the potatoes and chicken longer at 45 mins. Trust me this recipe my husband always request for it for 8 years already! haha

I did not like the lemon. It tasted odd to me so I made a small pan without lemon and it was really good! I was craving chicken and taters so this is perfect. Thanks!👍

This was really easy and tasted great. I will definitely make again. The only thing I would change would be the baking time. Both the chicken and potatoes took a lot longer than 15-20 minutes (I baked between 35-45 minutes). Definitely will be making again.

Try this recipe!!! I’m a Neonatal Nurse and my wife is a Orthopedic Surgeon so you can only imagine our schedules. It did take longer then I wanted and/or expected but it was so worth it!! The chicken was tender and juicy, I finally got my 3 year old son to try potato’s, and of course, my daughters were happy that their mommies could sit down and eat dinner as we usually eat out. Please try it! I think this is our new favorite.
