Tips for the baked chicken bites and asparagus recipe
- If your asparagus is thick, you can blanch them in boiling water for 2 minutes, then soak in ice water to stop the cooking process. This way, asparagus will roast faster and evenly in the sheet pan. You can skip this step if you have skinny asparagus.
- Make sure to dice chicken breast to regular size to ensure even baking.
- One good trick is to freeze the chicken for 45 minutes to make cutting the chicken bites easier and less messy, but make sure to bring it to room temperature before baking.
- You can customize the seasoning to your liking: try honey and mustard, taco seasoning, Indian spices, etc.

I really like the recipe. I think I would use 1/2 of the amount on the seasoning. It was a bit strong at full level.

This was a hit with the whole family. The baby loved the chicken and asparagus! There was plenty of lemon garlic butter left in the pan we used it as a vinaigrette for our salad. THIS IS FOREVER ON THE HOUSE MENU!
