Ingredients list for the Chicken Spinach Alfredo Casserole
- 3 large chicken breasts,boneless skinless
- 2 cup spinach, rinsed and chopped
- 4 oz Monterey Jack cheese (or Mozzarella)
- 2/3 cup cooked bacon, cut in pieces
The Alfredo sauce
- 1 tablespoon unsalted butter
- 4 cloves garlic, minced or 1 teaspoon garlic powder
- 2 cups heavy cream
- 4 oz soft cream cheese
- 1/4 cup low sodium hicken stock
- 2/3 cup Parmesan cheese
- Fresh cracked black pepper
- Fresh chopped parsley
The marinade:
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1/2 teaspoon Italian seasoning, optional
- Salt and fresh cracked black pepper

Directions
1. To make the chicken Alfredo casserole with spinach: Add olive oil, garlic, and Italian seasoning into a Ziplok bag along with 1 teaspoon of salt and ½ teaspoon black pepper. Seal the bag and shake until mixed. Add the chicken breasts, seal, and massage so the chicken is covered in the marinade, set aside for 10-15 minutes while you prep the remaining ingredients. Position a rack in the center of the oven and preheat the oven to 400ºF (200°C).
2. In a medium saucepan, add the butter and garlic over medium heat, cooking until aromatic, about 30 seconds. Add the cream, cream cheese, and chicken stock, stir well and bring to a boil. Add in the Parmesan, parsley, and pepper, stirring constantly until the cheese has melted and no lumps remain.
3. Arrange chicken breasts drained from the marinade in a baking dish. Top with chopped spinach then spread the Alfredo sauce over. Sprinkle mozzarella and finish with crisp bacon.
4. Bake the chicken casserole for 25-30 minutes, depending on the size of chicken breasts. Chicken is done when cooked through to an internal temperature of 165˚F (75°C). Sprinkle with more chopped parsley. Serve the chicken spinach alfredo casserole with a side of cauliflower rice, zucchini noodles, or pasta for non-keto. Enjoy!
Tips for the Alfredo chicken casserole recipe
- You can use store-bought Alfredo sauce to speed up the process, but nothing beats cooking from scratch ;)
- Add chopped spicy sausage when cooking the alfredo chicken casserole, you’ll get a meatier dish and it’s delicious!
- You can cut the chicken breasts into cubes to speed up baking time, or also use cooked shredded chicken.
- Freeze the chicken casserole into individual portions so you have a comforting dinner for evenings when you don’t want to cook from scratch
- If bacon is not your thing but you still want a crisp, crunchy topping, sprinkle your chicken casserole with crushed pork rind. For those not on a Keto diet, breadcrumbs or Panko are both great options.

This is always delicious, and a go-to meal choice! The one aspect that I find a bit frustrating is that I keep having to scroll up and down between the ingredients and the recip instructions - the photos are great but don't help the cooking experience much any more as they just get in the way now! A plea from a happy follower!!

OMG. This was the bomb. We don’t care for broccoli or cauliflower very much so layered it with green beans. My husband and I both had to have seconds. My son stopped by, he had a dinner date and said it smelled so good he thought about canceling his date. LOL. This definately is going in my saved file.

This was outstanding!! I made if for my family and they wouldn’t stop eating it. It was so easy to make too. I like my bacon really crispy so I put it on the chicken after it was baked so it had the crunch still. My mom asked for the recipe she liked it so much.

This was really good! I do not like spinach at all, but it was just fine in this dish. FYI, I did use jarred sauce (Paul Newman brand) and I cooked the chicken, spinach, and sauce for about 13 minutes, then topped it with the cheese and bacon and cooked for another 10 minutes. Super tasty and very moist!

This recipe is delicious! It's a restaurant quality dish that I'd prepare for guests because it's sure to impress. My only question is related to the recipe. The first step is to add red pepper flakes to a ziplock bag, along with other ingredients, but there's no mention of the amount. The ingredient list doesn't include red pepper flakes so it's not clear how much should be used. Can you clarify?
