Ingredients list for the Bacon Cauliflower Salad
- 1/2 head cauliflower, cut into florets
- 3/4 cup crispy bacon, crumbled
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 cup chopped parsley
- 1 small onion, chopped
- 1 red bell pepper, diced

Directions
1. To make the bacon cauliflower salad: Using a box grater or food processor, grate half a head of cauliflower. Place in a large bowl and season with salt and pepper. Mix to combine and set aside.
2. Prepare the remaining ingredients – crispy bacon, parsley, onion, red bell pepper – and place on top of the grated cauliflower.
3. In a jar, combine olive oil, lemon juice, salt, and pepper. Shake well, then pour over the salad ingredients in the bowl. Gently toss to combine the cauliflower salad.
4. Serve the bacon cauliflower salad at room temperature or cold. Enjoy!
Note: If you feel the taste of the cauliflower is too strong, you can steam or microwave the cauliflower with a little water after it’s been grated.
