Directions
1. To make the Cinnamon Apple Instant Oats: Put diced apple into a large skillet with 2 tablespoons water. Cover the skillet and cook over medium heat for about 5 minutes, stirring occasionally, until the apples become slightly soft and water is soaked up.
2. Add 1 tablespoon coconut oil (or butter) to the skillet. Stir apples and oil together until all the apples are well coated. Cook for 5 minutes, stirring from time to time until the apples become soft. You may have to cover the apples with a lid for the last 2 minutes.
3. Add Maple syrup, cinnamon, salt, and vanilla to the apples, and stir until well mixed. Cook for 5 minutes more, stirring every minute until the apples reach your desired softness.
4. In the meantime, make the stovetop oatmeal: Bring the water to a boil and then reduce the heat to a simmer. Gently stir in the oats. If the water starts to bubble over, reduce the heat even further. Cook the oatmeal for about 4 minutes, stirring occasionally.
5. Stir in the dash of salt, and divide the oatmeal into separate bowls. Top with the caramelized apples, a good drizzle of the cooking juices, and a sprinkle of cinnamon. Serve the apple cinnamon oatmeal immediately. Enjoy!

Tips for the Cinnamon Apple Oatmeal recipe
- You can choose whether or not you peel your apples. We like keeping the skin for a nice contrast in color!
- Using old fashioned oats will give more texture whereas quick oats will be creamier and will cook faster.
- For the oats, bring the water to a boil, then reduce the heat to a simmer before adding your oats. Otherwise, oats will stick together in a big lump in boiling water.
- You can use either water, almond milk, or milk for the oatmeal – we just noticed oatmeal can be creamier in water, and lower in calories!
What ingredients can we substitute for this oatmeal recipe?
- Butter can be substituted for coconut oil.
- Any sweetener you’d like can be substituted for the maple syrup. We have tried with honey and brown sugar with wonderful results.
