- 1 medium cabbage, cored and shredded
- 1 small fennel bulb, shredded
- 1 bunch scallions, thinly sliced
- 3 firm apples, peeled, cored, shredded or finely sliced
- 1/2 pack of crispy cooked bacon, broken up into small bits
- 1/2 cup almonds, chopped
- 1/4 cup apple cider vinegar
- 1/2 cup mayonnaise
- 1/2 cup Greek yogurt
- 1/3 cup honey (omit if on Keto or low carb)
- Salt and fresh cracked black pepper
- Juice of 1/2 fresh lemon

Directions
1. To make the coleslaw: In a mixing bowl or mason jar, whisk together mayonnaise, Greek yogurt, honey (if using), lemon juice, and apple cider vinegar until smooth. Season with salt and pepper to taste. Keep in mind that bacon will add a savory touch to the coleslaw.
2. In a large salad bowl toss together cabbage, fennel, apples, green onions, and chopped almonds. Pour the dressing over and toss to evenly coat. Serve the apple bacon coleslaw immediately or chill in the refrigerator. Enjoy!
