Cheesecake recipe from Alsace
There are as many recipes for cheesecake that Alsatian people! Even the name change: it is Käsekuechen for some cake, or a pie for others.

Ingredients: Cheesecake recipe from Alsace
For the dough:
- 250 g flour
- 125 g butter, diced
- 40 g sugar
- 1 small vanilla sugar packet
- salt
- 5 cups milk (more or less as needed)
For the filling:
- 1 kg of cottage cheese
- 100 ml of liquid cream
- 3 eggs
- 40 g cornstarch
- 120 g sugar
- 1 packet of vanilla sugar
Preparation steps
Prepare the dough: Mix ingredients in order. Add milk gradually, more or less depending on the consistency of paste. Form a ball, then wrap it in plastic wrap and let stand in refrigerator for 30 minutes minimum.
Meanwhile prepare the topping cheese. Mix all ingredients except eggs. Separate whites from yolks. Then beat the eggs whites with cheese first, and add yolks. Then mix into one unique mixture. Book.
Preheat oven to 200 degrees.
Remove dough from refrigerator and line it in a cake pan with your hands. Try to cover up to the edges. Prick with a fork. Return the pan to cool for a moment.
Pour the cheese cream into the pan and bake for 45 to 50 minutes, watching carefully. Cover with foil if top is browning too quickly.
Remove pan and cool for 5 minutes. Return the cake on a rack, remove the pan and allow to finish cooling a couple of minutes.
Return again and enjoy!
Tips
I prefer it still slightly warm…
You can accompany it with a small plum soup with red wine and spices , it is divine!
