Editor: Though question! Fennel has a slightly liquorish flavor, and thus, it may be challenging to find the perfect substitute, but… depending on your recipe, you can try to use anise or coriander seeds instead. Dill should work too, or what about fresh fennel, finely chopped? French tarragon would also be pretty close, but with a stronger flavor, so keep it light.
