Choose the right size turkey
If you’re planning to buy a whole turkey, count on 1 pound to 1 pound 1/2 (uncooked) per person. For a boneless turkey breast, count 1/2 pound per person. If you’re many at your thanksgiving dinner, get two smaller turkeys or one whole turkey and one breast instead of buying the biggest bird you can find.
Thaw your turkey in the refrigerator
How to thaw a whole turkey? The safest and easiest way to thaw a frozen turkey is in the fridge over a period of several days. Allow 24 hours of refrigerator thawing per 4 to 5 pounds of bird. An 18-pound turkey would take an estimated four days. So don’t wait until the last minute! Of course, this does not apply if you bought a fresh turkey.
Count 15 minutes per pound when roasting the turkey
Roast the turkey uncovered in a 325ºF (160ºC) oven, allowing around 15 minutes per pound. For a conventional turkey in the 14 to 20-pound range, this will take about 4 to 5 hours.
Use a roasting rack to roast the turkey
A roasting rack helps keep the bottom of your turkey from steaming and sticking to the bottom of the pan. No rack? No worries! Just use cut onions, celery stalk, or carrots to make a veggies rack and place the bird on top. You’ll have extra flavorful vegetables to use later, too!
Forget the basting of Turkey
Basting the turkey means more oven door opening, resulting in temperature changes that can end up drying out the bird. Instead, keep your turkey moist by brining it or by rubbing it all over with butter or oil before roasting.
