Editor: Vegetables all require different time to get done. Sometime I like to steam them first then roast, otherwise the outside gets burned and inside is still not really cooked. That’s a trick from my aunt! So I advise you to play successively with various cooking methods. Few years ago I saw a professional cook boiling potato wedges in water, then sauteeing with herbs, and then roasting in oven!
