Editor: To make a low-fat version of your regular mac and cheese, you can skip the usual butter-flour roux and use pureed cooked cauliflower as a thickener instead. Cauliflower is a fat-less way to add creaminess without altering the flavor. It’s also a great way to sneak in a healthy dose of fiber and vitamins. Try it also on top of veggies or other sides like dips, it makes wonders!
