Editor: It’s a fact that sweet potatoes have a bit more sugar and starch than white potatoes, you can soak your raw cut fries in water for a few hours before frying. This will help to release some of the starch. Also, maintaining a frying temperature of 350°F (175°C) is important so the inside of each fry gets thoroughly cooked and the outside crisps. After cooking, put the fries in one single layer on a paper towel–lined baking sheet after frying, to absorb residual fat.
