These small granola bars are light and digestible, just perfect for kids… and adults too!
Granola is a mixture of barely cooked grains laced with nuts and a sweetener like sugar or honey. It’s very easy to make at home and much better than what you can buy in stores. They are a lot of fun to play around as there are almost infinite variations.
This recipe for granola bars is aimed at children, but aren’t we all older kids? Besides this, nothing prevents you from preparing these little fruit and cereal bars just for fun. They taste really good, soft and are perfect for nutritional balance.
At first I wanted to put figs but prunes came as a substitute because I had everything ready except the figs. I took almonds with their skin and I put 1 1/2 ounce (40g) brown sugar instead of 3 ounces (80g) for something healthier.
Ingredients list for granola bars
For 10 to 12 small bars
- 3 tablespoons almonds
- 3 tablespoons pine nuts
- 3 tablespoons hazelnuts
- 3 tablespoons unsalted pistachios
- 3 dried apricots
- 2 plums
- 1 1/3 ounces (40g) brown sugar unrefined
- 2 egg whites
Granola bars instructions
1. Preheat oven to 360°F (180°c).
2. Chop nuts coarsely and mix with sugar and egg white.
3. Pour into a shallow flexible mold (easier to unmold) or in small individual molds. Bake for 8 minutes for individual molds and 10 minutes for a large one.
4. Let cool before removing from baking pan or molds and cut the chunks into bars.
Granola bars variations:
Dried Fruit Bars
You can try to adapt this recipe with dates or figs which are very are good, as are apricots, raisins, plums, pears… Substitute brown sugar and egg whites for a mix of honey and brown sugar. Put the dried fruit and oil in a food processor and mix until smooth. Proceed with the recipe as described above.
Peanut butter granola bars
Make your own power bar! Substitute peanut butter for the brown sugar.
